Train information at www.voyages-sncf.com . Stay in French: if you select English you get shunted to another site.

for train times use the german railway website www.bahn.de , select english as your language.
For trains to Amsterdam, book with www.thalys.com

First of all a you only have a week , are you sure you want to leave Paris for two days!?? I can%26#39;t imagine going that far when there are so many daytrips out of Paris.
anyways, your best bet( as in likely cheaper and faster , if booked in advance) would likely be Amsterdam on the Thaly.

Amsterdam is a 4-hr ride each way, Thalys train, thru Brussels (you dont have to change)...
Lucerne would not be direct, would probably be a 2 or 3 stage trip, 5-6 hours. (I%26#39;m currently researching Zurich-Paris, and it is one change and 4.5 hrs minimum duration)
If you have not yet bought plane tickets, buy %26#39;into%26#39; Amsterdam and %26#39;out of%26#39; Paris, no back-tracking.
