My husband and I would love to travel around April/May to Europe. Some of the places we thought of were France, Switzerland, Spain. Our main interest is hiking, biking while getting to know the area, food, culture. our concern is the weather. Is their any place in europe around that time that would fit the bill?

Spring should be good time for what you are planning - plenty of flowers and trees looking fresh and green. It%26#39;s likely to be warmer further south, obviously, but sometimes it can be beautiful even in the UK! Choosing an area will also depend on altitude - there may still be snow on some of the paths in mountain areas - and whether facilities are likely to be open, (hotels, bike hire, lifts in the mountains). Also check for the effect of public holidays in different places - there are Easter, May Day, Ascension, etc, over the period you%26#39;re considering.
In France have a look at Burgundy or the Loire valley for good cycle paths, pleasant walking and plenty of culture; we%26#39;ve been to both Andalucia and Mallorca for excellent walking holidays, and obviously Switzerland is superb for hiking (though you%26#39;d need to check on the TA forum there for likely areas in April/May).
You%26#39;re spoiled for choice, really!
