We plan to take the fast train from Pairs to Tours in June. Should we pre-book from Canada before we go or book once we are in Paris? If we should pre-book from here, is there an english language website that we should use? I understand that we cannot book until about 120 days before departure ....
Thank you.

Try www.eurail.com or do a Google on Europe by rail or try www.sncf.fr and click on their English language page.

Book 90 days before departure, look for PREM fares what are among the cheapest available. They are withdrawn from sale about 7 days before any given departure date.
The French Rail site is:
www.voyages-sncf.com
Trying to change the language from this site will redirect you to another site, often with different fare structures.
You might try either of these:
www.tgv.com
reiseauskunft.bahn.de/bin/query.exe/en?
If you book on line, sometimes you can print your tickets at home. If not, you can pick them up at any SNCF boutique or service window. You must have your ticket reference number and present the credit card used in the on line transaction.

Normally, the journey will involve taking the TGV from Paris Montparnasse to St Pierre-des-Corps, which is on the outskirts of Tours, and changing to a shuttle train to the station in the centre of Tours.
